Stuffed Oranges

  Stuffed Oranges - The wonderful, fresh fruit taste of oranges, with the incredible sweet potato, mixed with some spice and topped with nuts! The hardest part of this easy recipe is deciding whem to serve them, as they are so versatile.

Ingredients to make Stuffed Oranges

6 Medium Louisiana yams
4 Large navel oranges
1/2 Stick butter, melted
1/4 Tsp nutmeg
1/2 C brown sugar
1/2 C pecan pieces
1/4 Tsp. cinnamon
1 Oz. Grand Marnier or Triple Sec (optional)

Directions to make Stuffed Oranges

Step 1:Bake yams at 350 degrees until tender.
Step 2:Cut oranges in half. Scoop out pulp and chop up half of it. Peel yams; put into mixing bowl with chopped orange pulp, melted butter, sugar, nutmeg, cinnamon, half of pecans and Grand Marnier or Triple Sec.
Step 3:Mix well and stuff oranges. Sprinkle rest of pecans on top. Bake at 350 degrees for 20 minutes.

Sweet Coleslaw with Apples - This creamy coleslaw with fruit recipe is so very good! We suggest you go ahead and make a double batch, as anytime I have brought this salad to a potluck, it is the first thing gone. The sweetness of the apples highlights the cabbage perfectly.

Fruit Veg and Rice with Spices

  Fruit Veg and Rice with Spices - This is one sweet and spicy fruit recipe! The sweet comes from the assortment of fruits and vegetables used, and the spicy comes from the medley of added spices. A one-of-a-kind recipe, that everyone always asks for.

Main Ingredient: Assorted Vegetables

Ingredients to make Fruit Veg and Rice with Spices

4 c Coarsely chopped onions
2 tb Peanut oil
2 Garlic cloves, minced
1 ts Grated fresh ginger
1 1/2 tb Ground cumin seeds
1 1/2 tb Ground coriander seeds
1 1/2 ts Cinnamon
1 ts Turmeric
1/2 ts Cayenne
1/2 ts Ground fennel seeds
1/4 ts Black cardamom
1/4 ts Ground cloves
2 md Zucchini, quartered & sliced
1 1/2 c Water
1 c Green beans
2 Firm, tart apples, cored, cubed
1/2 Red bell pepper
1 c Chopped dried apricots
1/2 c Raisins
1/2 c Strawberry conserve
Fresh lemon juice

Directions to make Fruit Veg and Rice with Spices

Step 1:Saute the onions in the peanut oil for 10 minutes. Stir in the garlic, ginger and curry spices and continue to saute, stirring constantly for 3 minutes. Add the zucchini & water & stir well so that the spices won’t stick to the pot. Cover and simmer for 10 minutes
Step 2:Mix in the green beans, apple, peppers & dried apricots. Simmer gently, covered for about 30 minutes. Stir occasionally & add a little more water if needed to prevent sticking.
Step 3:When the fruit & vegetables are quite tender, stir in the raisins, the conserve & the lemon juice. Taste & adjust to your liking if necessary.
Step 4:If you need it to be more spicy, add more cayenne or garam masala. If you want it sweeter, add more conserve. Tarter, add more lemon juice.
